MAKES 18
1 cup brown sugar (250ml)
½ cup  Sunspread Smooth
¼ cup margarine
2 eggs
1 teaspoon vanilla
1 ½ cups sifted cake flour
2 teaspoons baking soda
½ teaspoon salt
1 cup chocolate chips (optional)
Pre-heat oven to 160ºC.    
Cream together sugar, margarine and Sunspread.  
Beat in eggs and vanilla.    
Mix together flour, baking soda and salt.   
Add to creamed mixture alternately with milk, mixing till blended.
Spoon a rounded tablespoon of batter into greased muffin pans or paper bake cups in muffin pans.
Place a few chocolate chips in centre of batter and top with second spoon of butter.  
Bake at 160ºC for about 25 minutes or till done.
