½ cup Sunspread Smooth
2 cups beef broth
2 tablespoons sunflower oil
1 cup chopped onion
3 - 4 cloves minced garlic
1 cup chopped green bell pepper
1 cup chopped carrots
1 kg beef stew meat, cut into 1cm cubes
salt and pepper
1 can of diced tomato
½ teaspoon dried thyme
1 bay leaf
In a medium bowl, stir together the Sunspread and broth until well blended.
Set aside.
Season meat with salt and pepper.
In large stew pot, heat oil over medium heat.
Add the onion, garlic, bell pepper and carrots and saute till onions are translucent.
Add the meat, continue to cook and stir often till it is browned on all sides.
Add the Sunspread and broth mixture, tomatoes, thyme and bay leaf.
Stir well and bring to boil. Reduce heat to low and simmer for about 1 hour until meat is tender.
Remove the bay leaf and serve on rice - enjoy!
